Want something sweet and healthy but don’t have a lot of time? How do Strawberry Creme Truffles sound right now? What if I told you it only has 3 ingredients and you can make these babies in about 20 min.

5 minutes of prep time and 15 of fridge time. Oh and did I tell you they are healthy for you! You bet they are.

The other night on Pinterest I ran across this recipe posted by mywholefoodlife.com and had to try it out that night! Now I really try to cut out my sugar intake including natural sugars like maple syrup so I modified the original a bit and it tasted great. Below I’ll share what I did to make these truffles even MORE healthier and a few more ingredients you can use to make it to spruce it up even more.

I’m all about simple and healthy. With only 3 ingredients, these Strawberry Creme Truffles are to die for. As you can see below the original recipe calls for maple syrup. I like to keep my sugar intake down so I used 1 Tablespoon of stevia and increased the coconut butter by 2 Tablespoons. They turned out amazing but you can sick with the maple syrup if you wish. Coconut butter is also just called coconut creme. You can buy it on Amazon if you don’t want to make it.

Ingredients

For the filling:
1 cup coconut butter
1 cup sliced strawberries
2 T maple syrup ( I used Stevia and 2 more Tablespoons of coconut butter)
For the chocolate:
1 cup dark chocolate chips or my 3 ingredient chocolate recipe
3 T almond milk or milk of choice

Instructions

In a food processor, mix the filling ingredients together very well.
Using a cookie scoop or a spoon, drop small balls of the filling onto a lined baking sheet. If the filling seems to soft, stick it in the fridge for 15 minutes.
Stick the baking sheet, with all the formed balls in the freezer to firm up.
While the balls are firming up, melt the chocolate.
Using a double boiler method, melt the chocolate chips and the milk.
Stir constantly until all the chips are melted and the mixture is smooth.
Working quickly, using two forks, roll the balls into the chocolate and place them back onto the lined baking sheet.
Stick the finished balls back in the freezer to firm up. It should take about 30 to 60 minutes.
